Guest Critic - Thomas, Kidd Chris Show, 94 WYSP

For lack of a better term, Thomas is the sidekick to Kidd Chris on 94 WYSP’s afternoon drive program aptly titled, the Kidd Chris Show. Sounding board, singer, guff taker, setup man and snake hater are also words that could be used to describe the good-natured Thomas. From 3 PM to 7 PM each weekday, Chris and Thomas mix it up with callers and an interesting list of characters. The style is topic driven, often on the edge and sometimes ventures into sports. Chris, having been raised in Syracuse, New York is an avid and well-educated hockey fan. Thomas is more the basketball aficionado, cutting his teeth as a Sacramento Kings follower. Sacramento is also the city where Thomas and Kidd Chris began broadcasting together. In 2004 they moved to San Antonio, Texas. Now approaching their two-year anniversary in Philly, they have quickly become part of the Philadelphia radio fabric. During our lunch at Thomas’ handpicked spot, much like the show, our subject matter ran the gamut. Sports, radio, geography, Philly and of course cheese steaks were discussed with the likeable radio personality.

It's obvious I'm not from Philly, so it's fair to say I have no loyalty to any cheese steak establishment. In my current stay here I have tasted several steaks and my journey has led me to Chink's in the NE. The thing that sets Chink's apart from everybody else is the care that goes into each and every steak. The meat is prepared per steak and the cheese is slowly melted over the top and the onions slow cooked to enhance the experience. And that's exactly what eating a Chink's steak is - an experience! One that you will remember and cherish always. I know I do!!!!!

Summary:

We arrived a few minutes early and shuffled our feet on the sidewalk outside of Chink’s and watched some of the magic unfold. The front window of the joint allows you an opportunity to look right at the grill and see the artists at work. This place from the start was right up my alley. I have been called a cheese steak hack by some because I have my delight with American cheese as opposed to Whiz. The claim is that real Philly cheese steaks come with Whiz. At Chink’s you can get only American cheese and the lone extra is onions. All along on this tour I have had mine with both of those accompaniments. The bread is from Liscio’s, which seemingly by no coincidence, hems in some of the areas best cheese steaks. The steak itself was not chopped on the grill, but rather given a chance to cook and then fuse with the fried onions. The cheese was spot on. When it was delivered to the table in a basinet of wax paper I looked under the hood and to be honest was only semi-optimistic at the prospects. One bite and I was sold. This was the best cheese steak on the tour yet. If I had a rating card, I would have pulled it out of my shirt pocket like soccer referees do when emphatically handing out yellow cards for player bookings. An easy rating of Five Golden Hockey Sticks.

Summary:

When we were looking for directions to this place, I noticed in some of the information on the Internet that they only served steaks one way, and I became a bit skeptical. But as soon as we got down to lunch the skepticism quickly vanished. The steaks were just tremendous. The rolls were perfect - one big problem a roll can have is having too much bread in it, and this one definitely did not. In fact, in some areas, it was just crust holding the steak in, which is great in my book. The beef, the cheese and the onions were all perfectly mixed and the steak was just the right size - big enough to fill you up but not so big that you leave feeling like crap. The first five-star rating of the tour for me.
